Ingredients:
4 tablespoons chopped walnuts
1 medium baking-type apple, cored and chopped
2 oz. crumbled Gorganzola (or othe blue cheese)
2 tablespoons maple syrup
Olive Oil
Coarse sea salt
1 lb (grapefruit-sized) ball of your favorite pizza dough, homemade or purchased
Method:
Pre-heat the oven to 425F
Perpare a baking sheet, either by oiling it lightly or lining with parchement. Sprinkle with a little cornmeal.
Prepare dough, as for a small pizza. Place on prepared sheet, and poke about a dozen holes across the surface with a wooden skewer. Sprinkle lightly with olive oil (not to cover) and allow to rest/rise for 20 minutes.
Make topping:
Mix together walnuts, apples, cheese and maple syrup. Set aside.
After 20 minutes, sprinkle topping over dough, pressing in lightly. Don’t cover the dough completely – let some spaces show through.
Sprinkle a tiny bit of coarse sea salt over the foccacia.
Bake for 25 minutes.
Cool on a rack for 10 minutes. Serve warm.
