3 cups quick-cooking oatmeal
1/4 cup unsweetened cocoa powder
2 cups granulated sugar
1 stick unsalted butter (1/2 cup)
1/2 cup milk
1/2 teaspoon salt
1 teaspoon vanilla extract
Big Scoop (about 1/2 cup) creamy peanut butter
Combine oatmeal and cocoa powder in a bowl. Set aside.
In a medium saucepan, over medium heat, combine the butter, sugar, milk, and salt. Bring to a boil, and boil for 2 minutes. Remove from the heat.
Add vanilla extract.
Stir in peanut butter until mostly combined.
Add oatmeal/cocoa mixture, and stir well.
Drop by spoonfuls onto a piece of aluminium foil. Allow to cool for 20 minutes… If you can wait that long!
